About those tomatoes, I remember my mother taking green ones in fall and wrapping them in newspaper, putting them in a box and then in the basement or root cellar or the equivalent. Then just checking on them to see how they are ripening. I think you can carry them into winter that way rather than try to use them all up immediately.
