We love our family and friends very much. Although we may not have a lot of gifts to give, we enjoy spending time together and baking for everyone. For those who are far away, we've been creating valentines... Mail a REAL letter to someone you care about! It's so nice to get a personal letter in the mailbox when it's mostly full of junk mail.
You are very right - it is so nice to receive actual mail. I think it is important to teach our children to write letters.

ReplyDeleteMexican Style Red Greek Lentil Soup
½ Cup Olive Oil
1/3 Cup of Balsamic Vinegar
2 Quarts Water
1 Cup chopped Celery
1 Cup sliced Carrots
1 Cup chopped Onions
1 Gallon can of Tomatoes
2 cloves of Garlic
1 teaspoon Oregano
1 teaspoon Cumin
1 lb. of Lentils
Salt & Pepper to taste
1-2 Teaspoons of a moderately hot Hot Sauce, to taste*
* Preferably Pickapeppa Red which comes in a 3 oz. bottle(not Pickapeppa Brown which comes in a 5 oz. bottle!).
Put everything but the Oregano and Cumin into a pot and bring to a boil. Simmer an hour. Add Oregano & Cumin. Simmer 30 minutes more or until lentils are sufficiently soft. Serve.
If this recipe is out of place, you can certainly repost it when you need it.
