Amaretto Snowballs

- 2 cups blanched almonds
- 1 cup gluten free icing sugar + extra for coating
- 2 tsp almond extract
- 1-2 tbsp amaretto liqueur (or amaretto extract for a non-alcoholic, child-friendly version)
