Apple orchard

We went to the apple orchard yesterday afternoon...these are some of the early apples available.  We did sample some off the trees where they're not yet ripe, and yes, they were hard.
Rob has been researching how to make an apple press.  We love apple cider.  He is planning to do something with our log splitter to make cider...in the meantime we're using our Jack Lalanne juicer.
We used the cider to make this for lunch today:

Bright yellow Jerusalem artichoke flowers from our backyard, which I brought to church yesterday morning...

I love Jerusalem artichoke flowers and tubers. I think it's a perfect combination of beauty and benefits.

Have you eaten the tubers? If so, how do you prepare them? I haven't eaten them, they seem kind of small, but think we need to because they are taking over our backyard...

I don't think I've seen Jerusalem Artichoke flowers before. I should research them for my new garden - but maybe not, as I remember that they are labor-intensive to prepare for cooking. It's been so long, I have no memory of what they taste like, either! But those flowers are lovely.
